Lemon Arugula Salad
Our current go-to most nights (some may say obsession) is a super simple lemon and arugula salad. We know it sounds a little crazy, but when we eat in, one of our biggest struggles is making a well-rounded meal. There are way too many times that we sit down to just a main dish of meat or pasta without any sides! So, our solution has been this arugula salad. We love it because it is simple and delicious. Just arugula, lemon juice, olive oil, and shaved parmesan!

There is a cute story behind why we love this salad so much. One of our favorite travel destinations is Miami. And one of our favorite restaurants is Cecconi's Miami in South Beach. It's the food, the service, and the outdoor garden vibe. It's been the perfect spot for some amazing dates. The Italian food is amazing, and when we go there, this salad was a must order; it is bright, fresh, and delicious! When we eat this salad at home, it always brings us back to those romantic and warm Miami nights!
Lemon Arugula Salad
Ingredients:
Serves 2
2 cups arugula
Juice of 1/2 lemon, squeezed
2 T Extra Virgin Olive Oil
Shaved Parmesan cheese
Salt & Pepper
Directions:
In a mixing bowl, squeeze lemon and pour olive oil over arugula. Mix until arugula is well coated.
Add salt and pepper generously and mix well.
Sprinkle on shaved Parmesan just before serving.
Notes:
Prep all of the ingredients while you get the rest of the meal cooking. We don't mix in the olive oil and dressing until right before we eat, otherwise the lettuce can start to wilt.
Use more salt & pepper than you think - it really makes a big difference!
If we are feeling really extra, we will use our mortar and pestle on some whole peppercorns to make it extra peppery!
If you aren't loving arugula (we're talking to Brad's mom and Cody's sister), substitute with a baby spring mix.
